Caramel Apple Pork Chops

Neither Chad nor I like pork chops too much but this meal was delicious. I will definitely make it again since we have more pork chops from Omaha Steaks. The only modification I made to the recipe was I doubled the sauce mixture, it worked out great. I made this with Boiled Potatoes and Sauteed Garlic Asparagus. I would've taken a picture but I'm kind of a freak about my food getting cold and since I didnt have the camera ready, I didnt want to sacrifice the heat. Sorry, next time I promise.


INGREDIENTS:

4 (3/4 inch) thick pork chops
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tart apples - peeled, cored and sliced
3 tablespoons pecans (optional)

DIRECTIONS:
1. Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.

2. Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.

3. In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.

4. Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

***My personal experience cautionary note: when trying to get 1/8th tsp of nutmeg, make sure to put the cap back on immediately after use or else you will probably knock it over at some point and spill the whole bottle all over the floor and cabinets.***

My first thought when I started reading was, "Where are the pics?" Then I read: "I would've taken a picture but I'm kind of a freak about my food getting cold and since I didnt have the camera ready, I didnt want to sacrifice the heat."

Heheheheh. :D I identify with this. I have been known to get up in the middle of a meal to reheat my plate if it had cooled down too much in the process of eating.

LOL re: nutmeg. :D
